Created by Charlotte and Jérôme Reyes as a declaration of love to fine dining, the Folie restaurant is the Petit Hôtel Confidentiel’s stylish and inspired epicurean experience. Situated in the historic centre of Chambéry, under the centuries-old gaze of the Castle of the Dukes of Savoie, it is the go-to address of food lovers and all those with a taste for the finer things in life, for whom gourmet cuisine is an emotion to be shared.
It is the “folie” of a thrilling culinary fusion and a décor that blends the luxury of velvet with bold and daring accents. Together, Charlotte Reyes and interior designer, Caroline Lory - former colleague of designer, Philippe Starck - have created a warm and intimate setting in which elegance combines with the eclecticism of unexpected design. The clever use of marble, fine craftsmanship, French fabrics, cosy banquette seating, plant-filled niches and subdued lighting all blend to create an atmosphere in which to enjoy timeless moments in the restaurant’s different intimate spaces. These include a large dining area, a sun-drenched terrace, the chef’s table at the heart of the action, and a lovers’ retreat in the relaxed and laid-back atmosphere of the wine cellar, surrounded by its divine flasks.
Fusion cuisine - where diversity meets innovation
The cuisine of Restaurant Folie is the alliance of the talent of Paul Thao, Chef de Cuisine, and Cécile Pommat, Pastry Chef.
For his menu, Paul looks for perfectly readable dishes, where the products are valued, declined and revealed in the right balance. The depth of tastes to which he likes to add touches of pep, this is certainly his signature, the one which fits perfectly with the identity of the house, this “Madness” where he feels at ease, supported by owners attentive.
Cécile, for each dessert, undertakes numerous tests, attentive to the accuracy of the balance. She constantly chats with Paul, at every stage, listens to suggestions and loves nothing more than to rethink her recipes, always with the goal of doing better.
His thinking is also moving forward around a sustainable pastry, notably freed from traditional sugars, lighter and more digestible. So that guests can enjoy the end of their meal in the best possible conditions.
Having trained under a Japanese chef who was a student to Joël Robuchon, then under chefs Marc Meneau, Jean-Michel Lorrain, and Best Craftsman of France, Jean-Luc Rocha, Shasitharan Manogeran’s career is a succession of happy encounters with Michelin-starred chefs. From his native Malaysia, he has maintained a taste for exotic spices, while from France, he has learned the fundamentals of traditional cuisine and been inspired by the greats. At Petit Hôtel Confidentiel’s Folie restaurant, Chef Manogeran has created a cuisine of instinct and spontaneity that is both innovative and daring, and leads the taste buds on a journey of discovery through new and unexpected flavours. Author and interpreter of his own inimitable style, the Malaysian chef has entered into a love affair with Savoie, acquiring the skill and artistry to recount many tales through an array of flavours and aromas.
